These Cheesy Mashed Potato Puff Bites are the perfect solution for leftover mashed potatoes. Lightly crispy on the outside, soft and cheesy inside, they make an easy appetizer, snack, or side dish. Customizable and family-friendly, this recipe is a staple in my kitchen for transforming simple ingredients into something exciting and satisfying.

Ingredients

  • to 3 cups mashed potatoes (cold or at room temperature)
  • 2 large eggs
  • 1½ cups grated cheese (cheddar, mozzarella, or a mix)
  • 2 tablespoons all-purpose flour or fine breadcrumbs (more if needed)
  • 1 teaspoon baking powder
  • 2 tablespoons finely chopped parsley or chives
  • Salt and pepper, to taste

Optional add-ins:

  • ½ cup finely diced chicken ham
  • ½ cup cooked, chopped turkey bacon
  • 2 tablespoons chopped green onions
  • ½ teaspoon garlic powder or onion powder

Instructions

  1. Preheat the oven to 200°C (390°F). Lightly grease a mini muffin tin with oil or non-stick spray.
  2. In a large bowl, add the mashed potatoes. If they are very firm, allow them to sit at room temperature for 10–15 minutes.
  3. Crack the eggs into the bowl and mix well into the mashed potatoes.
  4. Stir in the baking powder.
  5. Add the grated cheese and mix until evenly combined.
  6. Mix in the chopped parsley or chives, along with any optional ingredients such as diced chicken ham or turkey bacon.
  7. If the mixture is too wet, stir in the flour or breadcrumbs until the texture is scoopable and holds its shape.
  8. Season with salt and pepper to taste.
  9. Spoon the mixture into the muffin tin, filling each cup fully and smoothing the tops with the back of the spoon.
  10. Bake for 20–25 minutes, until puffed and golden on top.
  11. Remove from the oven and let cool for 5 minutes before gently lifting out the bites with a knife.
  12. Serve warm, or let cool completely and store in the fridge or freezer.

Notes

For extra flavor, try adding paprika, grated parmesan, or chopped vegetables.

If baking in a regular muffin tin, increase baking time by 5–8 minutes.

Use firmer mashed potatoes for better texture.

These bites reheat well in the oven at 180°C (350°F) for 10 minutes.

Avoid using overly creamy or wet mashed potatoes for best results.
