Ingredients
- 2½ to 3 cups mashed potatoes (cold or at room temperature)
- 2 large eggs
- 1½ cups grated cheese (cheddar, mozzarella, or a mix)
- 2 tablespoons all-purpose flour or fine breadcrumbs (more if needed)
- 1 teaspoon baking powder
- 2 tablespoons finely chopped parsley or chives
- Salt and pepper, to taste
Optional add-ins:
- ½ cup finely diced chicken ham
- ½ cup cooked, chopped turkey bacon
- 2 tablespoons chopped green onions
- ½ teaspoon garlic powder or onion powder
Instructions
- Preheat the oven to 200°C (390°F). Lightly grease a mini muffin tin with oil or non-stick spray.
- In a large bowl, add the mashed potatoes. If they are very firm, allow them to sit at room temperature for 10–15 minutes.
- Crack the eggs into the bowl and mix well into the mashed potatoes.
- Stir in the baking powder.
- Add the grated cheese and mix until evenly combined.
- Mix in the chopped parsley or chives, along with any optional ingredients such as diced chicken ham or turkey bacon.
- If the mixture is too wet, stir in the flour or breadcrumbs until the texture is scoopable and holds its shape.
- Season with salt and pepper to taste.
- Spoon the mixture into the muffin tin, filling each cup fully and smoothing the tops with the back of the spoon.
- Bake for 20–25 minutes, until puffed and golden on top.
- Remove from the oven and let cool for 5 minutes before gently lifting out the bites with a knife.
- Serve warm, or let cool completely and store in the fridge or freezer.
Notes
For extra flavor, try adding paprika, grated parmesan, or chopped vegetables.
If baking in a regular muffin tin, increase baking time by 5–8 minutes.
Use firmer mashed potatoes for better texture.
These bites reheat well in the oven at 180°C (350°F) for 10 minutes.
Avoid using overly creamy or wet mashed potatoes for best results.
