These Chewy Chocolate Chip Cookie Bars are the perfect solution when you need a quick, crowd-pleasing dessert. They’re soft, gooey, and full of melty chocolate chips, with minimal prep and clean-up. Baked in one pan, this recipe skips the hassle of portioning individual cookies, making it ideal for busy days, parties, and anytime you crave something sweet and comforting.

  • Total Time: 40 minutes
  • Yield: 24 1x

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving a slight overhang on the sides for easy lifting.
  2. Melt the butter in a large microwave-safe bowl and let it cool slightly.
  3. Add both sugars to the melted butter and stir until smooth and well combined.
  4. Mix in the eggs, one at a time, ensuring each is fully blended before adding the next. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the chocolate chips, reserving a small handful to sprinkle on top of the dough.
  8. Spread the dough evenly into the prepared pan using a spatula or clean hands.
  9. Sprinkle the reserved chocolate chips on top and gently press them into the surface.
  10. Bake for 25 to 30 minutes, or until the top is golden and the center is just set.
  11. Remove from the oven and allow the bars to cool in the pan for 20 minutes.
  12. Lift the bars out using the parchment overhang and transfer to a cutting board.
  13. Slice into bars of your desired size and serve.

Notes

For added texture, mix in ½ cup of chopped nuts or shredded coconut.

To ensure soft bars, do not overbake—remove when the center is slightly soft.

You can use chocolate chunks or a blend of chips for variation.

Store leftovers in an airtight container for up to 4 days at room temperature.

For a firmer texture, refrigerate the bars before slicing.
