  • 1 ½ cups milk

  • Vegetable oil, for frying

Instructions

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt until well combined.
  2. In a separate bowl, beat the eggs. Add milk and vanilla extract, and whisk until smooth.
  3. Gradually pour the wet mixture into the dry ingredients, whisking constantly to create a smooth batter. It should be thick but pourable.
  4. Pour 2 inches of vegetable oil into a deep skillet or heavy pan. Heat over medium heat until it reaches 350°F (175°C).
  5. Once the oil is ready, use a tablespoon or small cookie scoop to drop spoonfuls of batter into the hot oil. Fry 5–6 bites at a time to avoid crowding.
  6. Cook each bite for 1–2 minutes per side, turning as needed, until golden brown and puffed.
  7. Use a slotted spoon to remove bites from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. While still warm, dust generously with powdered sugar or roll in cinnamon sugar.
  9. Serve immediately, optionally with dipping sauces such as chocolate, caramel, or berry puree.

Notes

You may add a pinch of cinnamon or citrus zest to the batter for a flavor twist.

For a cleaner finish, place powdered sugar in a fine mesh sieve and dust the bites gently.

These are best served fresh, but they can be reheated in the oven to restore crispiness.
