Instructions
- Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
- In a large bowl, sift together flour, granulated sugar, baking powder, salt, and ground cinnamon. Mix well.
- In another bowl, whisk milk, vegetable oil, egg, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients. Fold gently until just combined; some lumps are okay.
- Divide batter evenly into muffin cups, filling each about three-quarters full.
- Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean.
- Mix 1/4 cup sugar and 1 tablespoon cinnamon in a shallow bowl for coating.
- Allow muffins to cool for 2 minutes, then brush tops with vegetable oil or melted butter.
- Dip muffins into the cinnamon sugar mixture to coat all sides evenly.
Notes
Do not overmix the batter to keep muffins tender and fluffy.
Muffins are best enjoyed warm but can be stored for later use.
Customize with nuts, raisins, or chocolate chips as desired.
Use paper liners or grease the pan well to prevent sticking.
