  • 6 slices turkey bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Cajun seasoning (plus more for sprinkling)
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 2 green onions, chopped
  • Fresh parsley, chopped (optional)
  • 1 tablespoon oil (for homemade fries or baking)

For the Voodoo Sauce:

  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon ketchup
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon garlic powder
  • 1 teaspoon hot sauce (optional, adjust to taste)

Instructions

  1. Cook the Fries:
    Preheat your oven to 220°C (425°F). If using frozen fries, spread them on a baking sheet in a single layer. Bake for 30–35 minutes, flipping halfway, until crispy and golden. For homemade fries, peel and slice potatoes, soak in water for 30 minutes, drain, and pat dry. Toss with oil, Cajun seasoning, and salt. Bake or air fry until crispy.
  2. Prepare the Turkey Bacon:
    In a skillet over medium heat, cook the turkey bacon until browned and crispy. Remove and place on paper towels, then chop into small pieces.
  3. Make the Voodoo Sauce:
    In a mixing bowl, whisk together mayonnaise, Dijon mustard, ketchup, Cajun seasoning, garlic powder, and hot sauce (if using). Stir until smooth. Set aside.
  4. Season the Fries:
    Once cooked, sprinkle the fries with Cajun seasoning, garlic powder, and paprika. Toss gently to coat evenly.
  5. Assemble the Fries:
    Place fries on an oven-safe tray. Top evenly with cheddar and mozzarella cheeses. Sprinkle chopped turkey bacon on top. Drizzle some Voodoo sauce over everything.
  6. Melt and Garnish:
    Return the tray to the oven for 5–7 minutes, just until the cheese melts. Remove from oven and finish with more sauce, chopped green onions, and parsley if desired.

Notes

For a spicier kick, increase the amount of hot sauce in the Voodoo sauce.

You can substitute the cheeses based on what you have—pepper jack and Monterey Jack work well too.

To make it vegetarian, omit the turkey bacon or replace it with a plant-based alternative.
