Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a mini muffin tin.
  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix buttermilk, egg, melted butter, vanilla extract, and maple syrup until smooth.
  4. Pour wet ingredients into dry and stir gently until just combined; avoid overmixing.
  5. Spoon batter into muffin tin cups, filling about ¾ full. Add optional mix-ins if desired.
  6. Bake for 10–12 minutes or until tops spring back when lightly pressed and a toothpick comes out clean.
