- 1 cup packed light brown sugar
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butterscotch chips
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease or line an 8×8-inch baking dish with parchment paper.
- In a medium bowl, mix together the brown sugar and melted butter until smooth.
- Stir in the egg and vanilla extract until fully incorporated.
- Add the flour, baking powder, baking soda, and salt. Stir gently until no dry spots remain.
- Fold in the butterscotch chips and chopped pecans (if using).
- Spread the batter evenly into the prepared pan.
- Bake for 25–30 minutes, or until the top is golden and a toothpick inserted in the center comes out with a few moist crumbs.
- Let cool in the pan for 15–20 minutes.
- Slice into bars and serve.
Notes
For nut-free bars, omit pecans.
You can substitute chocolate or white chocolate chips if desired.
Do not overmix the batter—this helps keep the bars soft and tender.
Allowing the bars to cool before slicing ensures cleaner edges and the best texture.
