These Apple Pie Bombs are the perfect blend of warm, spiced apple filling and soft, golden dough — coated in cinnamon sugar for an irresistible finish. Quick to prepare and full of classic flavor, they’re a must-try for apple dessert lovers.

  • Total Time: 25 minutes
  • Yield: 8 1x

Ingredients

Scale
  • 2 medium apples, peeled, cored, and finely diced
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 can refrigerated biscuit dough (8 biscuits)
  • 3 tablespoons melted butter (or plant-based alternative)
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Prepare the Apple Filling:
In a small saucepan, combine diced apples, brown sugar, and 1 teaspoon cinnamon. Cook over medium heat for 2–3 minutes, stirring frequently.
  2. Thicken the Mixture:
In a small bowl, mix cornstarch with water to form a smooth slurry. Pour into the apple mixture. Stir and cook for 3–4 minutes until thick and glossy. Remove from heat and let cool.
  3. Prepare the Dough:
Open the can of biscuit dough and separate the 8 biscuits. Flatten each biscuit into a 4-inch circle using your fingers or a rolling pin.
  4. Fill and Seal:
Place 1 tablespoon of apple filling in the center of each dough circle. Bring the edges together and pinch to seal completely. Place the sealed side down.
  5. Bake the Bombs:
Arrange the filled bombs on a parchment-lined baking sheet. Bake in a preheated oven at 180°C (350°F) for 12–15 minutes, or until golden brown and puffed.
  6. Coat in Cinnamon Sugar:
In a shallow bowl, mix granulated sugar and 1 teaspoon cinnamon. Brush each bomb with melted butter immediately after baking, then roll in the cinnamon sugar mixture to coat evenly.

Notes

For a nutty variation, add 1 tablespoon of chopped walnuts or pecans to the filling.

To enhance the flavor, a pinch of ground nutmeg can be added along with the cinnamon.

These bombs are best served warm, but they reheat well.

Avoid overfilling the dough to prevent leaks during baking.
