- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 2 large eggs
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter
- Neutral oil for frying (canola or sunflower)

- Optional toppings: powdered sugar, cinnamon sugar, chocolate glaze
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using).
- In a separate bowl, beat the eggs, then mix in the milk, vanilla extract, and melted butter.
- Gradually pour the wet mixture into the dry ingredients. Stir until just combined. Batter should be thick and spoonable.
- In a deep, heavy-bottomed pot, heat oil to 175–180°C (350–360°F). Use a kitchen thermometer for accuracy.
- Carefully drop heaping spoonfuls of batter into the hot oil using two spoons or a small scoop.
- Fry in small batches, cooking each piece for 2–3 minutes per side or until golden and cooked through.
- Remove with a slotted spoon and drain on a plate lined with paper towels.
- While warm, dust with powdered sugar or roll in cinnamon sugar.
- If desired, inject jam, chocolate, or cream cheese into the center using a piping bag.
- Serve immediately while warm for best texture and flavor.
Notes
Avoid overcrowding the pan to maintain oil temperature.
Batter can be stored in the fridge for up to 6 hours.
Best served fresh, but leftovers can be reheated in the oven for crispiness.
