Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using).
  2. In a separate bowl, beat the eggs, then mix in the milk, vanilla extract, and melted butter.
  3. Gradually pour the wet mixture into the dry ingredients. Stir until just combined. Batter should be thick and spoonable.
  4. In a deep, heavy-bottomed pot, heat oil to 175–180°C (350–360°F). Use a kitchen thermometer for accuracy.
  5. Carefully drop heaping spoonfuls of batter into the hot oil using two spoons or a small scoop.
  6. Fry in small batches, cooking each piece for 2–3 minutes per side or until golden and cooked through.
  7. Remove with a slotted spoon and drain on a plate lined with paper towels.
  8. While warm, dust with powdered sugar or roll in cinnamon sugar.
  9. If desired, inject jam, chocolate, or cream cheese into the center using a piping bag.
  10. Serve immediately while warm for best texture and flavor.
