- 2 ½ cups all-purpose flour
- 125g unsalted butter (cold, cubed)
- 2 eggs (divided)
- ½ cup Greek yogurt
- ¾ cup honey (preferably Greek thyme honey)
- ¼ cup sugar
- 1 tsp baking powder
- 1 tsp lemon zest
- ½ tsp ground cinnamon
- ¼ tsp salt
Instructions
- Mix flour, baking powder, sugar, and salt in a large bowl.
- Cut cold butter into flour mixture until it resembles coarse crumbs.
- Beat one egg and combine it with Greek yogurt and lemon zest.
- Add wet ingredients to dry mix; form a soft dough, adding cold water if needed.
- Wrap dough and chill in refrigerator for 30 minutes.
- Mix honey with ground cinnamon for the filling.
- Divide dough into two; roll out first half and line the pie dish.
- Spread honey-cinnamon mixture evenly over dough base.
- Roll out second half of dough and cover the filling. Seal edges by pinching crusts together.
- Brush top crust with beaten egg; make small slits for steam to escape.
- Bake in preheated oven at 180°C (350°F) for 35-40 minutes until golden brown.
- Cool slightly before serving.
Notes
For extra texture, add chopped nuts to the filling.
Substitute Greek yogurt with dairy-free yogurt if preferred.
Use honey that is high-quality for best flavor.
