  • 2 eggs (divided)
  • ½ cup Greek yogurt
  • ¾ cup honey (preferably Greek thyme honey)
  • ¼ cup sugar
  • 1 tsp baking powder
  • 1 tsp lemon zest
  • ½ tsp ground cinnamon
  • ¼ tsp salt

Instructions

  1. Mix flour, baking powder, sugar, and salt in a large bowl.
  2. Cut cold butter into flour mixture until it resembles coarse crumbs.
  3. Beat one egg and combine it with Greek yogurt and lemon zest.
  4. Add wet ingredients to dry mix; form a soft dough, adding cold water if needed.
  5. Wrap dough and chill in refrigerator for 30 minutes.
  6. Mix honey with ground cinnamon for the filling.
  7. Divide dough into two; roll out first half and line the pie dish.
  8. Spread honey-cinnamon mixture evenly over dough base.
  9. Roll out second half of dough and cover the filling. Seal edges by pinching crusts together.
  10. Brush top crust with beaten egg; make small slits for steam to escape.
  11. Bake in preheated oven at 180°C (350°F) for 35-40 minutes until golden brown.
