  • Total Time: 22 minutes
  • Yield: 24 1x

Ingredients

Scale

For the batter:

  • 1 cup yellow cornmeal
  • ¾ cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon sugar (optional)
  • 1 cup milk
  • 1 large egg
  • 3 tablespoons melted butter
  • 2 tablespoons honey

For the glaze:

  • 2 tablespoons butter
  • 2 tablespoons honey

Instructions

  1. Preheat the oven to 200°C (400°F). Lightly grease a mini muffin tin.
  2. In a large bowl, combine the cornmeal, flour, baking powder, salt, and sugar (if using). Mix thoroughly.
  3. In a separate bowl, whisk the milk, egg, melted butter, and honey until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir gently until just combined. Do not overmix.
  5. Fill each mini muffin cup ¾ full with batter.
  6. Bake for 10–12 minutes, or until golden and a toothpick inserted into the center comes out clean.
  7. While baking, melt the butter and honey for the glaze. Stir until fully blended.
  8. Remove the poppers from the oven and immediately brush with the warm honey butter glaze.
  9. Let cool slightly before serving. Serve warm for best flavor.

Notes

Use a regular muffin tin if needed; increase bake time to 15–18 minutes.

Add chopped turkey bacon, shredded cheese, or herbs for variation.

Serve with soups, chili, roasted meats, or as party bites.

Store leftovers in an airtight container at room temperature or freeze for later use.
