  • 2 slices of bread (whole-grain, sourdough, or choice)
  • 1 ripe avocado
  • 2 slices of cheese (cheddar, mozzarella, or a blend)
  • 1 teaspoon olive oil or butter
  • Salt and pepper, to taste
  • Optional: sliced tomato, spinach, or fresh herbs

Instructions

  1. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash gently with a fork, leaving small chunks for texture. Add salt and pepper to taste.
  2. Spread a thin layer of butter or brush olive oil on one side of each bread slice.
  3. Spread mashed avocado on the unbuttered side of one slice of bread.
  4. Layer cheese slices on top of the avocado. Add optional ingredients if desired.
  5. Place the second slice of bread on top, buttered side facing out.
  6. Heat a non-stick skillet over medium heat. Cook the sandwich for 3–4 minutes per side, pressing gently with a spatula.
  7. Flip carefully to ensure cheese melts evenly. Reduce heat and cover for 1 minute if needed.
  8. Remove from skillet and serve immediately, sliced diagonally.
