Ingredients

  • Pinch of salt

  • 1 ½ cups shredded cheese (cheddar, mozzarella, or blend)
  • Salt and freshly ground black pepper, to taste
  • Optional: cooked turkey bacon or diced chicken ham
  • Optional garnish: chopped parsley or green onions

Instructions

  1. Rinse the rice under cold water until clear.
  2. In a medium saucepan, bring 2 cups of water and a pinch of salt to a boil.
  3. Add the rinsed rice, reduce heat to low, cover, and simmer for 15 minutes until tender and water is absorbed.
  4. While rice cooks, melt butter in a separate saucepan over medium heat.
  5. Stir in flour, cooking for 2 minutes to form a roux.
  6. Slowly whisk in milk, cooking until thickened (4-5 minutes).
  7. Remove from heat and stir in shredded cheese until smooth.
  8. Fluff cooked rice with a fork, then fold in cheese sauce until well combined.
  9. Add cooked turkey bacon or chicken ham if desired.
  10. Season with salt and pepper to taste. Garnish with parsley or green onions.
