- 6 slices thick-cut bread (brioche or Texas toast)
- 3 large eggs
- ½ cup milk
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- ¼ cup granulated sugar (for cinnamon coating)
- 1 tsp ground cinnamon (for cinnamon coating)
- 4 oz cream cheese (softened) or filling of choice (e.g., fruit jam or chocolate spread)
- 2 tbsp butter (for frying)
Instructions
- In a small bowl, mix softened cream cheese with a few drops of vanilla extract. Set aside.
- Using a sharp knife, slice a pocket into the side of each bread slice. Be careful not to cut all the way through.
- Spoon or pipe the cream cheese mixture into each pocket, then gently press the slices to seal.
- In a shallow bowl, whisk together the eggs, milk, ½ tsp cinnamon, and vanilla extract until well blended.
- Dip each stuffed slice into the egg mixture for 3–4 seconds per side. Ensure the entire surface is coated.
- Heat a nonstick skillet over medium heat and add 1 tbsp butter.
- Place the soaked slices onto the skillet. Cook for 2–3 minutes per side until golden brown and firm to the touch.
- While the toast is cooking, mix granulated sugar and remaining ground cinnamon in a shallow dish.
- Immediately after cooking, coat each slice in the cinnamon-sugar mixture while still hot. Press gently to help the coating stick.
- Serve warm with optional toppings like whipped cream, fresh fruit, or maple syrup.
Notes
You can substitute the filling with fruit preserves, Nutella, or peanut butter for variety.
Avoid soaking the bread too long to prevent sogginess.
Serve immediately for the best crispy texture.
