Ingredients
- 2 large onions, sliced into rings
- 2 large eggs
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray or a small amount of olive oil
Instructions
- Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper and lightly spray with cooking spray or brush with olive oil.
- Peel and slice onions into 1/2 cm thick rings. Separate carefully and set aside any small broken pieces.
- Beat eggs in a shallow bowl until smooth. In another bowl, combine almond flour, Parmesan cheese, garlic powder, paprika, salt, and black pepper. Mix thoroughly.
- Dip each onion ring into the beaten eggs, letting excess drip off, then coat with the almond flour mixture, pressing gently. Repeat for a thicker coating if desired.
- Arrange the coated rings on the baking sheet in a single layer without touching.
- Bake for 15 minutes, then flip each ring and bake for another 10–15 minutes, until golden and crispy.
- Remove from oven and let cool on a wire rack for 5 minutes before serving.
Notes
Use thin slices for extra crispiness.
Customize seasonings with chili, smoked paprika, or Italian herbs.
Can be made ahead and baked fresh for best texture.
