These crispy keto onion rings are a healthier twist on a classic snack.   • 2 large onions, sliced into rings
  • 2 large eggs
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or a small amount of olive oil

Instructions

  1. Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper and lightly spray with cooking spray or brush with olive oil.
  2. Peel and slice onions into 1/2 cm thick rings. Separate carefully and set aside any small broken pieces.
  3. Beat eggs in a shallow bowl until smooth. In another bowl, combine almond flour, Parmesan cheese, garlic powder, paprika, salt, and black pepper. Mix thoroughly.
  4. Dip each onion ring into the beaten eggs, letting excess drip off, then coat with the almond flour mixture, pressing gently. Repeat for a thicker coating if desired.
  5. Arrange the coated rings on the baking sheet in a single layer without touching.
  6. Bake for 15 minutes, then flip each ring and bake for another 10–15 minutes, until golden and crispy.
  7. Remove from oven and let cool on a wire rack for 5 minutes before serving.

Notes

Use thin slices for extra crispiness.

Customize seasonings with chili, smoked paprika, or Italian herbs.
