Ingredients
For the cookies:
- 2 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
For the vanilla filling:
- ½ cup unsalted butter, softened
- 1 ½ cups powdered sugar
- 2 teaspoons vanilla extract
- 1–2 tablespoons milk
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each. Mix in vanilla extract.
- Gradually combine flour mixture with butter mixture until dough forms.
- Divide dough in half, wrap in plastic, and refrigerate for at least 1 hour.
- Roll dough into 1-inch balls and place on prepared baking sheets. Flatten slightly.
- Bake for 10–12 minutes until edges are lightly golden. Cool on sheets for 5 minutes, then transfer to wire racks.
- Beat butter for filling until creamy. Gradually add powdered sugar, then mix in vanilla and milk until smooth.
- Spread filling on one cookie and sandwich with another cookie.

Chilling the dough is important for maintaining the cookie shape.
Adjust milk in the filling for desired consistency.
