Easy Sushi Bake is a warm, comforting twist on traditional sushi. This baked version combines seasoned rice with a flavorful seafood mixture, topped with cheese and garnished with nori strips and sesame seeds. Perfect for family dinners, parties, or casual gatherings, it’s simple to prepare, versatile, and budget-friendly.

Ingredients

  • 2 cups sushi rice
  • 2 ½ cups water
  • 1 tsp salt
  • 3 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 lb cooked seafood mix (e.g., imitation crab, shrimp, or fish)
  • ½ cup mayonnaise
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 cup shredded cheese (optional)
  • 4 sheets nori (seaweed), cut into strips
  • 2 green onions, sliced
  • 1 tbsp sesame seeds

Instructions

  1. Rinse and cook rice: Rinse sushi rice under cold water until the water runs clear. In a pot, combine rice, water, and salt. Bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes. Remove from heat and let rest for 10 minutes.
  2. Season rice: Mix rice vinegar and sugar until dissolved. Fold gently into the cooked rice without crushing the grains.
  3. Prepare seafood mixture: In a medium bowl, combine cooked seafood, mayonnaise, soy sauce, sesame oil, garlic powder, and onion powder. Mix until evenly coated.
  4. Preheat oven: Set oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  5. Assemble bake: Spread seasoned rice evenly in the dish. Layer seafood mixture on top and smooth out. Sprinkle shredded cheese if desired.
  6. Bake: Bake for 15-20 minutes until the top is golden and bubbly.
  7. Garnish and serve: Sprinkle green onions, sesame seeds, and nori strips over the baked dish. Serve in squares or rectangles, using extra nori for scooping.

Notes

Cheese is optional but adds a golden crust.

For a vegetarian version, replace seafood with tofu or vegetables.

Can be prepared ahead of time by cooking rice and seafood mixture separately.
