  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup fresh blueberries
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan by greasing or lining it with parchment paper.
  2. Separate the eggs into whites and yolks. Place whites in a large bowl and yolks in a smaller bowl.
  3. Beat the egg whites with a pinch of salt until stiff peaks form.
  4. Whisk the yolks with cottage cheese, vanilla extract, and honey until smooth.
  5. Sift together flour and baking powder. Gradually fold into the yolk mixture until evenly combined.
  6. Gently fold one-third of the egg whites into the batter, then fold in the remaining whites in two additions.
  7. Fold in fresh blueberries carefully to avoid crushing them.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 35–40 minutes until golden brown and a toothpick inserted comes out mostly clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Handle the egg whites gently to preserve the airy texture.

You can add extra blueberries on top before baking for presentation.

For a nutty flavor, substitute part of the flour with almond flour.
