- 200 g unsalted butter, softened
- 100 g granulated sugar
- 100 g powdered sugar
- 1 large egg
- 1 tsp pure vanilla extract
- 300 g all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a large bowl, cream the softened butter with granulated and powdered sugar until light and fluffy (3–4 minutes).
- Add the egg and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, folding until a dough forms. Avoid overmixing.
- Scoop tablespoon-sized portions of dough and roll into balls. Place on the prepared tray, leaving 3–4 cm space between each.
- Optional: Flatten slightly with a fork or stamp and sprinkle with coarse sugar or add chocolate/nuts.
- Bake for 12–15 minutes, or until edges turn light golden brown. Monitor closely to prevent overbaking.
- Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
- Store in an airtight container or freeze for longer storage.
