  • Total Time: 28 minutes
  • Yield: 24 1x

Ingredients

Scale
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup melted butter (plus extra for greasing and glaze)
  • 1/4 cup honey

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a mini muffin tin with butter or cooking spray.
  3. In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
  4. In a separate bowl, beat the eggs, then add milk and melted butter, mixing well.
  5. Pour wet ingredients into the dry ingredients and stir gently until just combined.
  6. Spoon batter into the mini muffin cups, filling each about three-quarters full.
  7. Bake for 15–18 minutes until golden and a toothpick comes out clean.
  8. Meanwhile, melt 1/4 cup butter with 1/4 cup honey over low heat, stirring until smooth.
  9. Remove poppers from the oven and brush them generously with the honey butter glaze while warm.
  10. Let cool slightly before serving.

Notes

For a savory twist, add diced chicken ham or beef.

Feel free to fold in shredded cheese or jalapeños for added flavor.

Avoid overmixing the batter to keep the poppers tender.
