- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1/4 cup melted butter (plus extra for greasing and glaze)
- 1/4 cup honey
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a mini muffin tin with butter or cooking spray.
- In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
- In a separate bowl, beat the eggs, then add milk and melted butter, mixing well.
- Pour wet ingredients into the dry ingredients and stir gently until just combined.
- Spoon batter into the mini muffin cups, filling each about three-quarters full.
- Bake for 15–18 minutes until golden and a toothpick comes out clean.
- Meanwhile, melt 1/4 cup butter with 1/4 cup honey over low heat, stirring until smooth.
- Remove poppers from the oven and brush them generously with the honey butter glaze while warm.
- Let cool slightly before serving.
Notes
For a savory twist, add diced chicken ham or beef.
Feel free to fold in shredded cheese or jalapeños for added flavor.
Avoid overmixing the batter to keep the poppers tender.
