Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the egg lightly, then add the milk, melted butter, and vanilla extract. Whisk until smooth.
- Slowly pour the wet mixture into the dry mixture, whisking gently until combined. Do not overmix; a few small lumps are fine.
- Place a non-stick skillet or griddle over medium heat and brush lightly with butter. Allow it to heat evenly.
- Using a tablespoon or small scoop, drop portions of batter onto the pan, keeping them coin-sized.
- Cook until bubbles form on the surface and the edges begin to set, about 1 to 2 minutes.
- Flip each popper with a spatula and cook the other side for another minute until golden brown.
- Transfer the cooked poppers to a plate, cover lightly with a clean kitchen towel, and continue cooking the remaining batter.
- Serve warm with your favorite toppings such as maple syrup, honey, chocolate sauce, or fresh fruit.
Notes
Do not overcrowd the pan; small batches cook more evenly.
For extra flavor, fold in blueberries, mini chocolate chips, or small banana slices before cooking.
