Ingredients
- 2 slices of bread (white, whole wheat, or sourdough)
- 2 large eggs
- 2 slices of cheese (cheddar, mozzarella, gouda, or your choice)
- 1 tablespoon butter (plus extra for bread)
- Salt, to taste
- Black pepper, to taste
- Optional: chicken ham, turkey bacon, spinach, mushrooms, or fresh herbs
Instructions
- Crack the eggs into a bowl, season with salt and pepper, and whisk until fully combined.
- Heat a non-stick pan over medium-low heat. Add a small amount of butter, then pour in the eggs.
- Gently stir with a spatula, moving the eggs slowly until soft curds form. Cook until just set but still creamy. Remove from heat.
- Spread butter on one side of each bread slice. Place one slice on a clean surface, buttered side down.
- Add a slice of cheese, then spoon the scrambled eggs evenly over the cheese.
- Layer optional extras such as chicken ham, turkey bacon, or vegetables if desired.
- Place the second slice of cheese on top of the eggs, then cover with the remaining bread slice, buttered side facing out.
- Heat a skillet over medium heat and place the sandwich in the pan. Cook for 2–3 minutes per side, pressing lightly with a spatula until the bread is golden brown and the cheese has melted.
- Remove from the skillet, let it rest for one minute, then slice and serve warm.
Notes
Do not overcook the scrambled eggs before assembling the sandwich; they will continue cooking slightly when grilled.
You can mix herbs like parsley, chives, or cilantro into the eggs for extra flavor.
A mix of cheeses, such as cheddar and mozzarella, creates both sharpness and stretchiness.
