- 2 cups sushi rice
- 2 ½ cups water
- 3 tablespoons rice vinegar
- 1 tablespoon sugar
- ½ teaspoon salt
- 6 slices turkey bacon
- ½ cup chicken ham, diced
- 1 medium carrot, julienned
- 1 cucumber, sliced into matchsticks
- 1 avocado, diced
- ½ cup edamame, steamed
- 2 green onions, chopped
- Nori sheets, cut into strips
- ½ cup mayonnaise
- 1 tablespoon ketchup
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1 tablespoon soy sauce
- Sesame seeds, for garnish (optional)
Instructions
- Rinse sushi rice under cold water until the water runs clear.
- Combine rice and water in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let rest for 10 minutes with the lid on.
- Mix rice vinegar, sugar, and salt; fold into the rice gently.
- Cook turkey bacon in a skillet until crispy, then cut into pieces.
- Dice chicken ham into small cubes.
- Julienne carrot, slice cucumber, dice avocado, and steam edamame.
- Chop green onions and cut nori into thin strips.
- Prepare Yum Yum sauce: mix mayonnaise, ketchup, sugar, sesame oil, and soy sauce. Adjust seasoning.
- Assemble bowls: place rice as the base, arrange proteins and vegetables on top.
- Drizzle with Yum Yum sauce and sprinkle sesame seeds. Serve immediately.
