  • 3 tablespoons rice vinegar

  • 6 slices turkey bacon
  • ½ cup chicken ham, diced
  • 1 medium carrot, julienned
  • 1 cucumber, sliced into matchsticks
  • 1 avocado, diced
  • ½ cup edamame, steamed
  • 2 green onions, chopped
  • Nori sheets, cut into strips
  • ½ cup mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1 tablespoon soy sauce
  • Sesame seeds, for garnish (optional)

Instructions

  1. Rinse sushi rice under cold water until the water runs clear.
  2. Combine rice and water in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15 minutes.
  3. Remove from heat and let rest for 10 minutes with the lid on.
  4. Mix rice vinegar, sugar, and salt; fold into the rice gently.
  5. Cook turkey bacon in a skillet until crispy, then cut into pieces.
  6. Dice chicken ham into small cubes.
  7. Julienne carrot, slice cucumber, dice avocado, and steam edamame.
  8. Chop green onions and cut nori into thin strips.
  9. Prepare Yum Yum sauce: mix mayonnaise, ketchup, sugar, sesame oil, and soy sauce. Adjust seasoning.
  10. Assemble bowls: place rice as the base, arrange proteins and vegetables on top.
  11. Drizzle with Yum Yum sauce and sprinkle sesame seeds. Serve immediately.
