  • 1 package instant vanilla pudding mix
  • 1 cup boiling water
  • 1 cup cold water
  • 1 container whipped topping, thawed
  • 1 can mandarin oranges, drained
  • 1 cup mini marshmallows

Instructions

  1. Place the orange-flavored gelatin into a medium mixing bowl.
  2. Pour one cup of boiling water over the gelatin and stir until it is completely dissolved. Continue stirring until no crystals remain.
  3. Add one cup of cold water to the dissolved gelatin and stir again to combine.
  4. Place the bowl in the refrigerator for about 15 to 20 minutes. The gelatin should begin to thicken but not fully set. It should have a slightly syrupy texture.
  5. Sprinkle the instant vanilla pudding mix over the thickened gelatin. Whisk continuously until the mixture is smooth and free of lumps. This step creates a creamy base.
  6. Gently fold in the thawed whipped topping. Use a spatula to combine while keeping the mixture light and airy. Do not overmix, as the whipped topping helps create the fluffy consistency.
  7. Drain the canned mandarin oranges thoroughly. Add them to the mixture and fold them in gently so they remain intact.
  8. Add the mini marshmallows and fold again until they are evenly distributed throughout the salad.
  9. Transfer the salad into a serving bowl. Smooth the top with a spatula.
  10. Cover the bowl with plastic wrap and place it in the refrigerator for at least two hours, or until the salad is well chilled and set.

Notes
