- 1 lb ground chicken
- 2 tablespoons chipotle sauce or chipotle seasoning
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon ground cumin
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 4 burger buns
- 4 slices cheese (cheddar, mozzarella, or pepper jack)
- ½ cup lettuce leaves
- 1 tomato, sliced
- 1 small red onion, thinly sliced
- ¼ cup mayonnaise (or Greek yogurt for a lighter version)
- 1 tablespoon lime juice
- 1 teaspoon adobo sauce (optional for extra heat)
Instructions
- In a large bowl, place the ground chicken. Add chipotle sauce, smoked paprika, garlic powder, onion powder, cumin, salt, and black pepper. Mix gently until well combined.
- Divide the mixture into four equal parts. Shape each portion into a patty and press a small indentation in the center to help even cooking.
- Heat olive oil in a skillet or grill pan over medium-high heat. Once hot, place the patties on the surface. Cook for 5–6 minutes per side until golden brown and the internal temperature reaches 165°F (74°C).
- During the last minute of cooking, add a slice of cheese to each patty. Cover briefly to allow it to melt.
- In a small bowl, mix mayonnaise, lime juice, and adobo sauce. Stir until smooth and creamy.
- Lightly toast the burger buns on the grill or in a dry pan until golden.
- Spread the prepared sauce on the bottom half of each bun. Place the chicken patty with melted cheese on top.
- Add lettuce, tomato slices, and onion rings. Spread more sauce on the top bun if desired, then close the burger.
- Serve immediately with fries, potato wedges, or a side salad.
Notes
Adjust spice by reducing or increasing the chipotle and adobo sauce.
Avocado slices, grilled peppers, or coleslaw can be added for variety.
For a lighter version, wrap the patty in lettuce leaves instead of using a bun.
