- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup diced ripe tomatoes
- 1 cup shredded mozzarella cheese
- ½ cup chopped fresh basil
- ¼ cup chopped chicken ham
- ¼ cup turkey bacon, cooked and crumbled
- ¾ cup plain yogurt or buttermilk
- 2 large eggs
- ¼ cup olive oil
- 2 tablespoons milk
Instructions
- Preheat your oven to 180°C (350°F). Grease a standard loaf pan with olive oil or line with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper until evenly combined.
- Dice the tomatoes, shred the mozzarella, chop the basil, crumble the cooked turkey bacon, and chop the chicken ham. Set aside.
- In a separate bowl, whisk together yogurt or buttermilk, eggs, olive oil, and milk until smooth.
- Gradually fold the wet ingredients into the dry ingredients using a spatula. Mix until just combined, avoiding overmixing.
- Gently fold in the tomatoes, mozzarella, basil, turkey bacon, and chicken ham until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 45–55 minutes. Test with a toothpick; it should come out clean or with a few melted cheese crumbs.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool slightly before slicing.
Notes
Pat the tomatoes dry to prevent excess moisture.
For a vegetarian version, omit chicken ham and turkey bacon.
Add garlic powder, dried oregano, or other herbs to enhance flavor.
Slice once slightly cooled to maintain structure.
