  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt

  • 1 cup diced ripe tomatoes
  • 1 cup shredded mozzarella cheese
  • ½ cup chopped fresh basil
  • ¼ cup chopped chicken ham
  • ¼ cup turkey bacon, cooked and crumbled
  • ¾ cup plain yogurt or buttermilk
  • 2 large eggs
  • ¼ cup olive oil
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 180°C (350°F). Grease a standard loaf pan with olive oil or line with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper until evenly combined.
  3. Dice the tomatoes, shred the mozzarella, chop the basil, crumble the cooked turkey bacon, and chop the chicken ham. Set aside.
  4. In a separate bowl, whisk together yogurt or buttermilk, eggs, olive oil, and milk until smooth.
  5. Gradually fold the wet ingredients into the dry ingredients using a spatula. Mix until just combined, avoiding overmixing.
  6. Gently fold in the tomatoes, mozzarella, basil, turkey bacon, and chicken ham until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 45–55 minutes. Test with a toothpick; it should come out clean or with a few melted cheese crumbs.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool slightly before slicing.

Notes

Pat the tomatoes dry to prevent excess moisture.

For a vegetarian version, omit chicken ham and turkey bacon.

Add garlic powder, dried oregano, or other herbs to enhance flavor.

Slice once slightly cooled to maintain structure.
