Ingredients
- 9 cups Rice Chex cereal
- 2 cups dried apple chips or freeze-dried apples
- 1 ½ cups white chocolate chips
- 1 ½ cups caramel baking bits
- 3 tablespoons unsalted butter
- ½ cup powdered sugar
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- Pinch of salt
Instructions
- Measure Rice Chex cereal into a large mixing bowl. Keep dried apple chips ready in a separate bowl.
- In a saucepan over low heat, combine caramel baking bits and butter. Stir until melted and smooth. Add brown sugar and a pinch of salt, stirring until fully combined.
- Pour the caramel mixture over the Rice Chex cereal. Use a spatula to gently toss and coat all pieces evenly.
- Fold in dried apple chips.
- In a microwave-safe bowl, melt white chocolate chips in 20 to 30 second intervals, stirring after each until smooth. Drizzle the melted chocolate over the cereal mixture.
- Transfer the coated mixture into a large zip-top bag. Add powdered sugar and ground cinnamon. Seal the bag and shake until the cereal is fully coated.
- Spread the mixture onto a parchment-lined baking sheet. Let it cool for 20 to 30 minutes until set.
- Break apart large clusters and store in an airtight container.
Notes
Do not substitute fresh apples, as they add moisture and make the cereal soggy.
Add extra cinnamon or nutmeg for more warmth.
Package in small bags for gifting during holidays or parties.
