- 3 cups mashed potatoes (prepared and cooled)
- 1 cup shredded cheddar cheese
- ½ cup cooked chicken ham, finely diced
- ¼ cup green onions, finely chopped
- 2 tablespoons butter, softened
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 2 tablespoons milk
- Cooking oil for frying
Instructions
- In a large mixing bowl, combine cooled mashed potatoes, shredded cheddar cheese, diced chicken ham, chopped green onions, softened butter, garlic powder, onion powder, paprika, salt, and pepper. Mix until smooth and well incorporated.
- Scoop small portions of the mixture and roll into 1–1.5 inch balls. Place on a parchment-lined tray.
- Set up a coating station with flour in one bowl, beaten eggs mixed with milk in another, and breadcrumbs in a third.
- Roll each potato ball in flour, dip into the egg mixture, then coat with breadcrumbs. Press lightly to adhere.
- Heat oil in a deep frying pan to 350°F (175°C). Fry the puff bites in batches for 3–4 minutes per side, until golden brown.
- Drain on paper towels to remove excess oil.
- Serve warm with your favorite dipping sauce.
Notes
For a healthier alternative, bake at 400°F (200°C) for 20–25 minutes, flipping halfway.
Mix in herbs, vegetables, or extra cheese for variety.
Ensure mashed potatoes are slightly cooled to maintain shape.
