- Fresh white fish fillets (such as cod or tilapia)
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup coconut milk
- Zest and juice of 2 limes
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Pat fish fillets dry and season both sides with salt and pepper. Optional: add paprika or chili flakes.
- Melt butter in a large skillet over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant.
- Increase heat slightly and sear the fish fillets 3–4 minutes per side until golden and tender.
- Reduce heat to medium-low and pour in coconut milk. Stir in lime zest and juice. Cook 3–4 minutes until sauce is smooth and slightly thickened.
- Return fish to the skillet, spoon sauce over fillets, and simmer gently 2–3 minutes. Adjust seasoning if needed.
- Remove from heat and sprinkle with fresh parsley. Serve immediately with rice, quinoa, or vegetables.
Notes
Use firm white fish for best results.
Adjust garlic and lime to taste.
For a dairy-free option, substitute butter with coconut oil.
