  • 6 large eggs
  • 1 cup cottage cheese
  • ½ cup chicken ham, diced
  • ¼ cup turkey bacon, cooked and crumbled
  • ½ cup shredded cheese (cheddar or mozzarella)
  • ½ cup chopped vegetables (bell peppers, spinach, mushrooms)
  • Salt and pepper, to taste
  • Fresh herbs, optional, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or line with silicone cups.
  2. Cook turkey bacon until crisp, drain, and crumble.
  3. Dice chicken ham and optionally sauté for 1–2 minutes.
  4. Chop vegetables and herbs.
  5. In a large bowl, whisk eggs and cottage cheese until smooth. Season with salt and pepper.
  6. Add turkey bacon, chicken ham, vegetables, shredded cheese, and herbs. Fold gently to combine.
  7. Pour mixture into muffin tin, filling cups about ¾ full.
  8. Bake for 20–25 minutes. Insert a toothpick to check doneness—it should come out clean.
  9. Let cool slightly, then remove from tin. Serve warm or store in an airtight container.

Notes

Reheat leftovers in the microwave or oven.
