Ingredients
- 1 cup all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon baking powder
- 1 cup cold sparkling water
- Marshmallows (standard size or mini)
- Granulated sugar (optional, for coating)
- Vegetable or canola oil (for deep frying)
Instructions
- In a medium bowl, whisk together flour, cornstarch, and baking powder. Gradually add cold sparkling water, mixing until smooth and slightly thick.
- Preheat oil in a deep fryer or heavy pot to 350°F (175°C). Ensure oil is deep enough to submerge marshmallows.
- Dip marshmallows into the batter, coating fully. Allow excess batter to drip off. Optionally, roll in granulated sugar.
- Carefully lower marshmallows into the hot oil one at a time. Fry 1–2 minutes, turning occasionally, until golden brown.
- Remove with a slotted spoon and drain on paper towels. Allow to cool slightly before serving.
Notes
Maintain oil temperature to ensure even frying and avoid greasy marshmallows.
Cold sparkling water in the batter enhances crispiness.
Fry in small batches for best results.
Serve immediately for optimal texture; optional toppings include chocolate, caramel, cinnamon sugar, or crushed nuts.
