Instructions

  1. Measure ingredients – Combine soy sauce, sugar, and mirin in a small saucepan.
  2. Dissolve sugar – Stir gently to ensure the sugar dissolves before heating.
  3. Heat mixture – Place the saucepan over medium heat and bring to a gentle simmer.
  4. Simmer and reduce – Let the sauce simmer for 8–10 minutes, stirring occasionally, until it thickens slightly.
  5. Optional thickening – Mix cornstarch with water and stir into the sauce if a thicker consistency is desired. Continue simmering for 1–2 minutes.
  6. Cool slightly – Remove from heat and allow the sauce to cool. It will thicken further as it cools.
  7. Store or serve – Transfer to a glass jar or airtight container. Use immediately or refrigerate for up to two weeks.
