- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs

- 1 cup buttermilk or milk with 1 tablespoon lemon juice

Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan with butter or cooking spray and lightly dust with flour.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy (2–3 minutes).
- Beat in the eggs one at a time, followed by the vanilla extract, ensuring each ingredient is fully incorporated.
- Gradually add the dry ingredient mixture to the butter-sugar mixture, alternating with buttermilk. Begin and end with the dry ingredients. Mix gently until just combined.
- Fold in optional mix-ins like chopped nuts, dried fruits, shredded coconut, or lightly cooked turkey bacon using a spatula.
- Pour the batter into the prepared pan and spread evenly. Tap the pan gently to release air bubbles.
- Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Avoid opening the oven frequently.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve plain, with powdered sugar, a simple glaze, or alongside fresh fruits.
Notes
Do not overmix the batter to avoid a dense cake.
Optional mix-ins enhance flavor and texture but are not required.
The cake can be adapted for gluten-free or plant-based diets by substituting flour and milk.
