- 2 boneless, skinless chicken breasts
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper

- ½ cup pimento cheese spread (homemade or store-bought)
- 2 tablespoons honey
- 4 brioche buns, lightly toasted
- Optional: lettuce, sliced tomato, or pickles for topping
Instructions
- Prepare the Chicken: Slice chicken breasts horizontally if thick. Season both sides with smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub seasoning in evenly.
- Cook the Chicken: Heat olive oil in a skillet or grill pan over medium heat. Cook chicken 5–6 minutes per side until golden, cooked through, and juicy. Let rest briefly.
- Toast the Buns: Slice buns in half and toast lightly in a skillet, grill, or toaster oven.
- Spread Pimento Cheese: Apply a generous layer of pimento cheese to the bottom half of each bun.
- Add Chicken: Place cooked chicken on top of the pimento cheese.
- Drizzle Honey and Pepper: Add half a tablespoon of honey over the chicken and sprinkle with freshly ground black pepper.
- Optional Toppings: Add lettuce, tomato, or pickles for extra texture and flavor.
- Complete the Sandwich: Top with the second bun half, press gently, and serve warm.
Notes
For extra spice, use cayenne pepper or hot honey.
Assemble sandwiches just before serving to avoid soggy bread.
