- 1 ½ cups crushed graham crackers
- 1 (14 oz) can sweetened condensed milk
- ½ cup key lime juice
- Zest of 1 lime
- 12 oz white chocolate, chopped or in chips
- Optional: extra graham cracker crumbs for rolling
Instructions
- Crush graham crackers into fine crumbs using a food processor or a rolling pin.
- Transfer crumbs to a large mixing bowl.
- Add sweetened condensed milk, key lime juice, and lime zest to the crumbs.
- Mix thoroughly until a thick, sticky mixture forms.
- Cover the bowl and refrigerate for 1 hour to firm up.
- Scoop small portions using a teaspoon or cookie scoop.
- Roll each portion into a smooth, even ball between your palms.
- Place truffles on a parchment-lined baking sheet and chill for 15–20 minutes.
- Melt white chocolate using a double boiler or microwave in 30-second intervals, stirring until smooth.
- Dip each truffle into the melted chocolate, ensuring full coverage.
- Allow excess chocolate to drip off before placing on parchment.
- Optionally, sprinkle crushed graham crackers or lime zest on top while chocolate is soft.
- Let truffles set at room temperature or chill in the refrigerator for 10–15 minutes until hardened.
Notes
For a different flavor, try milk or dark chocolate coating.
Add shredded coconut or finely chopped nuts for extra texture.
Keep lime juice chilled for the freshest taste.
