- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup finely chopped pistachios
- 1/4 teaspoon salt
- 1/4 cup finely chopped chicken ham (optional twist for a savory-sweet variation)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together softened butter and 1/2 cup powdered sugar until light and fluffy.
- Mix in vanilla extract. Fold in chicken ham if using.
- In a separate bowl, whisk together flour, salt, and chopped pistachios.
- Gradually combine dry ingredients with the butter mixture. Fold gently to form a soft dough.
- Scoop dough into 1-tablespoon portions and roll into balls or shape into crescents.
- Place cookies 2 inches apart on the prepared baking sheet.
- Bake for 12–15 minutes, until edges are lightly golden.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- Dust with powdered sugar once cooled.
Notes
Dough can be chilled for up to 24 hours before baking.
Toast pistachios lightly for enhanced flavor.
Optional variations include citrus zest, white chocolate drizzle, or alternative nuts.
