  • 6 soft rolls or sandwich buns
  • 6 eggs
  • 6 turkey sausage links, cooked and sliced
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Optional: chopped green onions or spinach for extra flavor

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Crack the eggs into a medium bowl. Add milk, salt, and pepper. Whisk until smooth and slightly frothy.
  3. Cook the turkey sausage in a skillet over medium heat for 5–7 minutes, turning occasionally until browned. Slice into bite-sized pieces.
  4. Melt 2 tablespoons of butter in a nonstick skillet over medium-low heat. Pour in the egg mixture and stir gently to scramble. Cook for 3–4 minutes until just set but still moist.
  5. Slice the rolls in half horizontally. Optionally, lightly toast them in the oven for 3–5 minutes.
  6. Place scrambled eggs on the bottom half of each roll. Top with sliced turkey sausage and sprinkle shredded cheese evenly.
  7. Place assembled rolls on a baking sheet and bake for 5–7 minutes or until cheese is melted and golden.
  8. Optional: add chopped green onions, spinach, or herbs before serving.
  9. Serve warm and enjoy.
