These Rotel Cream Cheese Sausage Balls are a savory, cheesy snack that’s perfect for gatherings, brunch, or a quick bite. With a creamy, slightly spicy filling and a golden exterior, they’re easy to make and always a crowd favorite.

  • Total Time: 40 minutes
  • Yield: 30 1x

Ingredients

Scale
  • 1 lb ground beef sausage
  • 8 oz cream cheese, softened
  • 1 can (10 oz) Rotel diced tomatoes and green chilies, drained
  • 2 cups shredded cheddar cheese
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine the softened cream cheese and ground beef sausage. Mix thoroughly until smooth.
  3. Stir in the shredded cheddar cheese and drained Rotel tomatoes and green chilies. Ensure ingredients are evenly distributed.
  4. In a separate bowl, whisk together the flour, baking powder, garlic powder, onion powder, and salt.
  5. Gradually add the dry mixture to the sausage mixture. Fold together until a firm but slightly sticky dough forms.
  6. Scoop out portions and roll into 1-inch balls. Place them evenly on the prepared baking sheet.
  7. Bake for 20–25 minutes, or until golden brown and cooked through. Rotate the pan halfway for even baking.
  8. Remove from the oven and allow to cool slightly before serving.

Notes

You can freeze the unbaked sausage balls for later. Bake directly from frozen, adding a few extra minutes.

Substitute cheddar with other cheeses like pepper jack or mozzarella for variation.

Adjust spice levels by adding more or fewer chilies or a pinch of cayenne pepper.
