- 3 to 4 ripe bananas
- 1 cup all-purpose flour
- 2 tablespoons sugar (adjust to taste)
- 1 teaspoon baking powder
- A pinch of salt
- 1/2 teaspoon vanilla extract (optional)
- Vegetable oil for frying
Instructions
- Peel and slice the bananas into 1/2-inch thick pieces.
- In a large bowl, mix the flour, sugar, baking powder, and salt.
- Mash the banana slices lightly in a separate bowl, leaving some chunks. Add vanilla extract if desired.
- Gradually combine the dry ingredients with the mashed bananas, stirring gently until a thick batter forms. Avoid overmixing.
- Heat vegetable oil in a deep frying pan over medium heat, about 1/2 inch deep. Test the oil by dropping a small amount of batter; it should sizzle immediately.
- Using a spoon, carefully drop portions of batter into the hot oil, frying a few at a time.
- Fry each fritter 2–3 minutes per side until golden brown.
- Remove fritters with a slotted spoon and drain on paper towels.
- Serve warm, optionally with powdered sugar, honey, maple syrup, or yogurt.
Notes
Overripe bananas provide natural sweetness and soft texture.
Do not overcrowd the pan to maintain consistent frying temperature.
Batter can be customized with cinnamon, nutmeg, chocolate chips, or nuts.
