Ingredients

  • 8 ounces cream cheese, room temperature
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, speckled brown
  • 1 cup fresh strawberries
  • 1 1/2 cups graham cracker crumbs, finely crushed
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon agar-agar powder
  • 1/4 cup water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed.
  3. Press this mixture firmly into the bottom of a 9-inch springform pan using the back of a measuring cup.
  4. Bake in the preheated oven for about 10 minutes until lightly golden brown.
  5. Remove from oven and let it cool completely.
  6. In another bowl, beat together cream cheese and granulated sugar until smooth and creamy.
  7. Add vanilla extract, ripe bananas (mashed), and blend until everything is well combined without lumps.
  8. In a small saucepan over medium heat, combine 1/4 cup water with agar-agar powder.
  9. Bring this mixture to a boil while stirring continuously until fully dissolved.
  10. Once dissolved, remove it from heat and let it cool slightly.
  11. Slowly pour the cooled agar-agar mixture into the cream cheese filling while continuously mixing to ensure even incorporation.
  12. Gently fold in chopped fresh strawberries at this stage.
  13. Pour your luscious filling over the cooled crust in the springform pan.
  14. Smooth out the top with a spatula.
  15. Cover with plastic wrap and refrigerate for at least four hours or overnight if you can resist!
  16. When ready to serve, carefully remove from the springform pan.
  17. Garnish with additional fresh strawberries on top or sprinkle some nuts for added crunch!
  18. Slice into wedges and enjoy immediately.
