- 8 ounces cream cheese, room temperature
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 ripe bananas, speckled brown
- 1 cup fresh strawberries
- 1 1/2 cups graham cracker crumbs, finely crushed
- 1/4 cup unsalted butter, melted
- 1 tablespoon agar-agar powder
- 1/4 cup water
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed.
- Press this mixture firmly into the bottom of a 9-inch springform pan using the back of a measuring cup.
- Bake in the preheated oven for about 10 minutes until lightly golden brown.
- Remove from oven and let it cool completely.
- In another bowl, beat together cream cheese and granulated sugar until smooth and creamy.
- Add vanilla extract, ripe bananas (mashed), and blend until everything is well combined without lumps.
- In a small saucepan over medium heat, combine 1/4 cup water with agar-agar powder.
- Bring this mixture to a boil while stirring continuously until fully dissolved.
- Once dissolved, remove it from heat and let it cool slightly.
- Slowly pour the cooled agar-agar mixture into the cream cheese filling while continuously mixing to ensure even incorporation.
- Gently fold in chopped fresh strawberries at this stage.
- Pour your luscious filling over the cooled crust in the springform pan.
- Smooth out the top with a spatula.
- Cover with plastic wrap and refrigerate for at least four hours or overnight if you can resist!
- When ready to serve, carefully remove from the springform pan.
- Garnish with additional fresh strawberries on top or sprinkle some nuts for added crunch!
- Slice into wedges and enjoy immediately.
Notes
Store leftovers in an airtight container.
Reheat slices gently in microwave.
Serve with fresh mint leaves garnish.
Use ripe bananas for extra sweetness.
