  • 70 g sugar
  • 10 g salt
  • 10 g instant yeast
  • 5 large eggs
  • 200 g unsalted butter, softened
  • 150 ml whole milk
  • 200 g chocolate chips

For the vanilla custard:

  • 500 ml milk
  • 5 large egg yolks
  • 100 g sugar
  • 40 g cornstarch
  • 1 tsp pure vanilla extract

Instructions

  1. Prepare the custard: Heat milk until simmering. Whisk egg yolks, sugar, and cornstarch. Temper eggs with hot milk, return to saucepan, stir until thickened. Add vanilla, cover, and cool.
  2. Make the brioche dough: Mix flour, sugar, salt, and yeast. Add eggs and warm milk, knead until dough forms. Gradually add butter, knead until smooth and elastic. Cover and let rise 1–2 hours.
  3. Assemble the brioche: Punch down dough, roll into a rectangle. Spread cooled custard evenly, sprinkle chocolate chips, and roll into a log. Slice and place in greased dish. Cover and let rise 30–45 minutes.
  4. Bake: Preheat oven to 180°C (350°F). Brush with milk or egg wash. Bake 25–30 minutes until golden brown. Cool slightly before serving.
