For the brioche:
- 500 g all-purpose flour
- 70 g sugar
- 10 g salt
- 10 g instant yeast
- 5 large eggs
- 200 g unsalted butter, softened
- 150 ml whole milk
- 200 g chocolate chips
For the vanilla custard:
- 500 ml milk
- 5 large egg yolks
- 100 g sugar
- 40 g cornstarch
- 1 tsp pure vanilla extract
Instructions
- Prepare the custard: Heat milk until simmering. Whisk egg yolks, sugar, and cornstarch. Temper eggs with hot milk, return to saucepan, stir until thickened. Add vanilla, cover, and cool.
- Make the brioche dough: Mix flour, sugar, salt, and yeast. Add eggs and warm milk, knead until dough forms. Gradually add butter, knead until smooth and elastic. Cover and let rise 1–2 hours.
- Assemble the brioche: Punch down dough, roll into a rectangle. Spread cooled custard evenly, sprinkle chocolate chips, and roll into a log. Slice and place in greased dish. Cover and let rise 30–45 minutes.
- Bake: Preheat oven to 180°C (350°F). Brush with milk or egg wash. Bake 25–30 minutes until golden brown. Cool slightly before serving.
Notes
Prepare custard in advance to save time.
Use room-temperature butter for easier dough incorporation.
Customize with nuts, caramel, or spices as desired.
