- 1 package Chocolate Graham Crackers
- 1/2 cup Unsalted Butter, melted
- 16 ounces Cream Cheese, softened
- 3/4 cup Granulated Sugar
- 1/2 cup Fresh Orange Juice
- Zest of One Orange
- 1 teaspoon Vanilla Extract
- 1/2 cup Sour Cream
- 1/4 cup Unsweetened Cocoa Powder
- 1 tablespoon Agar-Agar Powder
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- In a medium mixing bowl, combine crushed chocolate graham crackers with melted unsalted butter until well mixed.
- Press this mixture firmly into the bottom of a springform pan creating an even layer.
- Bake in the preheated oven for about 10 minutes until slightly firm.
- In a large mixing bowl, beat together softened cream cheese and granulated sugar until creamy and smooth.
- Add in fresh orange juice, zest from one orange, vanilla extract, sour cream, and unsweetened cocoa powder.
- Mix until fully incorporated and silky in texture.
- Prepare agar-agar according to package instructions and allow it to cool slightly before adding it to your cheese mixture.
- Fold in agar-agar gently until evenly distributed throughout the mixture.
- Pour the filling over your baked crust while it's still warm but not hot.
- Smooth out the top using a spatula and ensure there are no air bubbles lurking beneath.
- Cover your springform pan with plastic wrap or aluminum foil and refrigerate for at least four hours—overnight is even better!
- Once chilled and set, carefully run a knife around the edges before releasing from the springform pan.
- Slice into decadent pieces and garnish as desired.
Notes
Store leftovers in an airtight container.
Reheat individual slices gently in microwave.
Serve with whipped cream and zest.
Use room temperature cream cheese for smoothness.
