Ingredients

  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon pure vanilla extract

Instructions

  1. Whisk together sugar, cocoa powder, cornstarch, and salt in a medium saucepan.
  2. Gradually add milk while whisking to create a smooth mixture.
  3. Heat over medium heat, stirring constantly until it begins to thicken.
  4. Beat the egg yolks in a small bowl, then temper by adding a few spoonfuls of the hot mixture slowly while whisking.
  5. Pour the tempered yolks back into the saucepan and cook for 2–3 minutes until the pudding thickens further.
  6. Remove from heat and stir in butter and vanilla extract until fully incorporated.
  7. Pour pudding into serving dishes and cover with plastic wrap directly on the surface to prevent skin formation.
  8. Refrigerate for at least 2 hours before serving.
