Ingredients
- 1 cup fresh or frozen corn kernels
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk
- 1/4 teaspoon baking powder
- Salt and pepper, to taste
- 4 slices turkey bacon
- 4 slices chicken ham
- 4 sandwich buns or rolls
- Optional: cheese slices, lettuce, tomato, avocado, or sauce of choice
- Cooking oil or butter for frying
Instructions
- Make the batter: In a medium bowl, combine corn, flour, eggs, milk, baking powder, salt, and pepper. Mix until smooth and slightly thick.
- Heat the skillet: Preheat a non-stick skillet over medium heat and add a small amount of cooking oil or butter.
- Cook fritters: Spoon 2–3 tablespoons of batter per fritter into the skillet, flatten slightly, and cook each side for 3–4 minutes until golden brown. Transfer to a paper towel-lined plate.
- Cook turkey bacon: In a separate skillet over medium heat, cook bacon 2–3 minutes per side until crisp.
- Warm chicken ham: Lightly warm ham slices in the skillet or microwave for 30 seconds.
- Toast buns: Slice buns in half and toast until lightly crispy.
- Assemble sandwiches: Place a corn fritter on each bun bottom, top with turkey bacon, chicken ham, and optional toppings. Cover with the top bun.
- Serve: Enjoy immediately while warm and crispy.
Notes
For extra flavor, add herbs or spices to the fritter batter.
Sandwiches can be customized with your favorite cheese or vegetables.
