Ingredients
- 6 large eggs (4 boiled, 2 raw for coating)
- 400g ground turkey sausage (or chicken sausage)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 cup breadcrumbs (regular or panko)
- Cooking spray or light oil mist
Instructions
- Place four eggs in a saucepan and cover with cold water. Bring to a boil, then cook for 6–8 minutes depending on preferred yolk texture. Transfer to cold water immediately to cool. Peel carefully once cooled.
- In a medium bowl, mix ground turkey sausage with salt, pepper, paprika, garlic powder, and onion powder until evenly combined.
- Divide the sausage mixture into four equal portions. Flatten each portion into a patty.
- Place one boiled egg in the center of each patty. Gently shape the meat around the egg, sealing all sides completely.
- In one bowl, beat the remaining two raw eggs. In another, add breadcrumbs.
- Dip each wrapped egg first in beaten egg, then roll in breadcrumbs, pressing lightly so the coating adheres well.
- Preheat the air fryer to 190°C (375°F) for 3–5 minutes.
- Spray the air fryer basket lightly with cooking spray. Arrange the coated eggs in a single layer, leaving space between them.
- Air fry for 12–15 minutes, turning halfway through, until golden brown and crisp.
- Remove from the air fryer and let rest for a few minutes before serving. Slice and enjoy warm or cold.
Notes
For a lighter version, use ground chicken or turkey sausage.
For extra crispiness, use panko breadcrumbs.
Serve with mustard, yogurt dip, or your favorite sauce.
These can be stored in the fridge for up to three days or frozen for later use.
