- 2 egg whites, fresh and at room temperature
- 1 teaspoon cinnamon, divided
- 1 cup granulated sugar (or superfine sugar)
- Vegetable oil for frying (high smoke point like canola or peanut oil)

- 4 oz cream cheese, softened (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the angel food cake mix and egg whites.
- Using an electric mixer on medium speed, beat until stiff peaks form.
- Gently fold in vanilla extract and half of the cinnamon into the batter using a spatula.
- Scoop the batter into a piping bag fitted with a large round tip.
- On a parchment-lined baking sheet, pipe small bite-sized circles about 1 inch apart.
- Bake in preheated oven for about 10-12 minutes or until they’re puffed and lightly golden.
- While your bites are baking, heat vegetable oil in a deep fryer or heavy pot over medium-high heat until it reaches around 350°F (175°C).
- Carefully drop in several baked cake bites at once—fry until they're golden brown on all sides (about 2-3 minutes).
- Remove them from oil using tongs and let them drain on paper towels.
- In another bowl, combine granulated sugar and remaining cinnamon.
- While your churro bites are still warm, roll them in this mixture until fully coated.
- Garnish with optional cream cheese filling if desired.
- Serve immediately while they’re still warm and crispy.
