- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1 ½ cups shredded cheddar cheese
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- ¼ teaspoon salt, or to taste
- ¼ teaspoon ground black pepper
- 1 teaspoon Dijon mustard
- 1 teaspoon ketchup
- 1 teaspoon hot sauce (optional, for mild heat)
Instructions
- Place a medium saucepan over medium heat and melt 2 tablespoons butter, stirring occasionally.
- Add 2 tablespoons flour and whisk constantly for 1–2 minutes until lightly golden and smooth.
- Gradually pour in 1 cup whole milk, whisking continuously to avoid lumps. Cook for 3–4 minutes until slightly thickened.
- Stir in ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon smoked paprika, ¼ teaspoon salt, and ¼ teaspoon black pepper until evenly combined.
- Reduce heat to low. Add 1 ½ cups shredded cheddar cheese gradually, stirring after each handful until fully melted and smooth.
- Mix in 1 teaspoon Dijon mustard, 1 teaspoon ketchup, and 1 teaspoon hot sauce (optional). Stir for 1–2 minutes until uniform.
- Adjust consistency by adding a splash of milk if too thick, or cooking slightly longer if too thin.
- Taste and adjust seasoning as needed. Serve immediately over chips, tacos, or vegetables.
Notes
Use freshly shredded cheese for the smoothest texture.
Whisk constantly to prevent lumps or graininess.
