  • halibut fillets, fresh and firm
  • 1 cup heavy cream, high-quality
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 tablespoon Dijon mustard, smooth variety
  • 2 tablespoons fresh dill, chopped finely
  • salt, to taste
  • pepper, to taste
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grab a baking dish (about 9×13 inches) and lightly grease it with olive oil or butter to prevent sticking.
  3. In a mixing bowl, whisk together 1 cup of heavy cream, 2 tablespoons of freshly squeezed lemon juice, 1 tablespoon of Dijon mustard, and a pinch of salt and pepper until smooth.
  4. Place your halibut fillets in the greased baking dish.
  5. Generously sprinkle the halibut fillets with salt and pepper on both sides.
  6. Pour the creamy mixture over the fillets evenly so every inch is coated.
  7. Chop about two tablespoons of fresh dill finely.
  8. Sprinkle the chopped dill over the halibut just before baking.
  9. Grate around half a cup of Parmesan cheese and sprinkle it generously over the top of each fillet.
  10. Bake in your preheated oven for approximately 25-30 minutes or until the fish flakes easily with a fork and is cooked through but still moist.
  11. Garnish each piece with additional fresh dill if desired, and enjoy immediately while it's still warm.

Notes

Store leftovers in an airtight container.

Reheat gently at low temperature.

Serve with lemon wedges and greens.
