Ingredients
- 2 cups almond flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup melted butter or coconut oil
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup unsweetened almond milk
- 1 teaspoon garlic powder (optional)
- 1 teaspoon dried herbs (optional, such as rosemary or thyme)
Instructions
- Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
- In a large bowl, whisk together almond flour, baking powder, salt, and optional garlic powder or herbs.
- In another bowl, beat the eggs, then add melted butter and almond milk. Whisk until smooth.
- Stir shredded cheese into the wet mixture.
- Pour wet ingredients into dry ingredients and fold gently with a spatula until a sticky dough forms.
- Using your hands or a cookie scoop, shape dough into small balls and place on the prepared baking sheet, leaving space between each roll.
- Flatten the tops slightly to ensure even baking.
- Bake in the preheated oven for 18–22 minutes, until golden brown and firm to the touch. Rotate the pan halfway through for even browning.
- Let the rolls cool for 5–10 minutes before serving.
Notes
Optional: Add herbs, spices, or small bits of cooked turkey bacon or chicken ham to the dough for extra flavor.
For best texture, reheat in an oven instead of a microwave.
Rolls can be stored at room temperature for up to 3 days or frozen for up to 2 months.
