  • Total Time: 30 minutes
  • Yield: 10 1x

Ingredients

Scale
  • 2 cups almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup melted butter or coconut oil
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon dried herbs (optional, such as rosemary or thyme)

Instructions

  1. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together almond flour, baking powder, salt, and optional garlic powder or herbs.
  3. In another bowl, beat the eggs, then add melted butter and almond milk. Whisk until smooth.
  4. Stir shredded cheese into the wet mixture.
  5. Pour wet ingredients into dry ingredients and fold gently with a spatula until a sticky dough forms.
  6. Using your hands or a cookie scoop, shape dough into small balls and place on the prepared baking sheet, leaving space between each roll.
  7. Flatten the tops slightly to ensure even baking.
  8. Bake in the preheated oven for 18–22 minutes, until golden brown and firm to the touch. Rotate the pan halfway through for even browning.
  9. Let the rolls cool for 5–10 minutes before serving.

Notes

Optional: Add herbs, spices, or small bits of cooked turkey bacon or chicken ham to the dough for extra flavor.

For best texture, reheat in an oven instead of a microwave.

Rolls can be stored at room temperature for up to 3 days or frozen for up to 2 months.
