- 1 cup cottage cheese, low-fat or full-fat
- 3 large eggs, at room temperature
- 1 cup ground oats (made from about 1½ cups rolled oats)
- 2 tsp baking powder
- ½ tsp salt, kosher
- Optional add-ins: herbs like rosemary or thyme, seeds like sunflower or flaxseeds
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a loaf pan with oil or cooking spray.
- In a food processor, combine cottage cheese and eggs. Blend until smooth and creamy.
- Add ground oats, baking powder, and salt to the mixture in the food processor. Pulse until well combined into a thick batter.
- If using optional add-ins like herbs or seeds, fold them gently into the batter using a spatula.
- Pour the mixture into the prepared loaf pan and smooth out the top with the spatula.
- Bake in the preheated oven for about 40-45 minutes until golden brown on top and firm to touch.
- Once baked, remove from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack.
- Slice while warm and serve with butter or your favorite spread.
Notes
Store leftovers in an airtight container.
Reheat slices in a toaster oven.
Serve with avocado or tomato spread.
